Happy Saturday! This morning I woke up with an intense craving for pancakes. The problem is, I don’t want to make an entire batch just for myself, and I don’t have the pre-prepared pancake mix. So, I turned to Google! And I found this pancake recipe for 1, called Lonely Girl Pancakes. I can personally tell you that you don’t need to be lonely or a girl to make these pancakes. Though if you’re a guy and have the appetite of most of the guys I know, you might want to double the recipe.
- 1/4 cups of flour
- 1 tsp baking powder
- 1 tbsp sugar
- 1/4 cups of milk
- 1 tbsp oil
- 1 egg
Mix the dry ingredients together. Whisk together the wet ingredients. Add the wet to the dry ingredients and mix! Then, grease a pan with either butter, oil, or cooking spray (I used baking spray and it worked perfectly). Pour some batter. Wait for some bubbles to form. Flip. Serve. It’s seriously that easy.
Some changes I made:
- I added a tiny bit of orange zest and a bit of freshly squeezed orange juice (I’ve been trying to eat 1 fruit a day and cutting open an orange for the juice forced me to eat the rest of it)
- I added a pinch of salt. Not sure if this did anything to the taste, but I’ve always heard that a pinch of salt brings out all the other flavors! And it didn’t taste salty or anything.
I served these with my favorite butter Smart Balance (thanks to Courtney for introducing me) and some maple syrup! They were super light and fluffy and just all around delicious. I’ll definitely be making them again when I have an extra hour in the mornings.
